In this extended version of the interview, we discuss the three main characteristics brewers look for in yeast (attenuation, flocculation and flavor profile) as well as when it makes sense to select more than one yeast strain. We also talk about Barbarian’s Saison Blanc which was licensed by PicoBrew for their Pico homebrew machine.
